Would you like to know just how much I love them?
I offered to make the pies for Thanksgiving this year.
Sounds innocent enough, until you take into consideration to food issues faced by members of the family.
It is virtually impossible to create a menu for an occasion that contains food that is edible by every single member of the family. There's generally a wide selection, and each person knows what dishes are off-limits to them. Easy enough.
But when it comes to Thanksgiving, there is a limit to the number of pies that one family can eat. (Although now that there is a 15 year old nephew in the picture that may not be an accurate statement). Traditionally there are two pies: Apple, made friendly to all food-issues, and pumpkin, made for those of us without issues.
It was easy enough, until a gluten intolerance entered the picture.
Now we need a pie crust that is free of:
- Gluten
- Soy
- Corn
- Legumes
- Oats
- and perhaps other things that I'm not even thinking of at the moment.
Now you've got me curious. Care to share the recipe?
